Make salad dressings with vinegar rather than lemon juice. Choose from red wine, balsamic, herb-flavored, or fruit-flavored vinegars. Whisk together 1 teaspoon or more of vinegar and 1 tablespoon of olive oil for a large individual salad. The more vinegar used, the better the response.
